Thinking about Christmas already?..Christmas Pudding Cheesecake

Like a lot of people, Christmas is one of my favourite times of the year.  I particularly enjoy the social aspect of the season.  Parties, visiting friends, and of course, the star of the show...the Christmas dinner.

This year I'm having family to stay.  A mix of adults and children, there will be 7 of us plus my wonder-dog.  In my head we will be having the perfect Christmas; a heaving table piled with good things to eat, a tree that could easily grace the windows of Harrods, and happy families playing parlour games and munching on mince pies.  The reality will probably be quite different with over excited children, discarded toys, and turkey-stuffed adults laying semi-conscious on the sofa!  What we will have in abundance, though, is fun.

In my vain attempt to make this time of year as magical as possible I have begun my preparations in earnest.  No presents have been bought but I have turned my attention to what I'll feed the hungry masses.

In our house we're not fans of Christmas Pudding.  It's too heavy after a large meal and just adds to the feeling of bloatedness that lingers well into the evening.  I do, however, want something sweet to be part of the meal and I want to keep a festive feel to this course.  Racking my brains I think I may have stumbled upon a bit of an original idea...Christmas Pudding Cheesecake.  I'm not claiming that this is 100% my invention but it's certainly not something I've come across before.  Crumbled pieces of Christmas Pudding will not make their way into this sweet temptation.  Instead, no bake cheesecake will be infused with booze-soaked fruits and possibly some crunchy mixed nuts.  As you can see, the recipe is still working itself out in my head but I plan to have a trial run this weekend and will, of course, let you know how it goes...
